Chocolate Waffle Cake
Equipment
- 2 medium mixing bowls
- 1 waffle iron
- 1 knife for slicing fruit and cake

- 1 15.2 oz Boxed cake mix – Duncan Hines Perfectly Moist series
- 1 cup Water
- 1/2 cup Oil
- 3 large Eggs
- 3/4 cup Raspberries
- 3/4 cup Blueberries
- 2 whole Apricots sliced
- 6-8 Meringue cookies
Instructions
- Preparing the Waffle Cake Batter
- Combine all cake mix ingredients into a medium bowl.
- Cooking the Waffle Layers
- Preheat the waffle maker
- Spray the waffle iron. Pour batter onto the preheated waffle maker
- Cook until cooked through
- Repeat until all three waffle layers are made
- Cool each layer completely in seran wrap.
- Putting the Waffle Cake Together
- Start with one waffle layer on the cake stand
- Add whipped cream, a layer of fresh raspberries, blueberries, and sliced apricots
- Place another waffle layer on top and repeat the process
- Continue layering until all waffle layers are used
- Decorating the Waffle Cake
- Add the whipped cream to the top of the cake. I prefer to pipe the whipped cream to make it look pretty!
- Garnish with additional fresh fruit and meringue cookies
- Cool for 30 minutes before slicing.

To make things even better, this cake can be thrown together quickly thanks to boxed cake mix. As a military spouse with two kids, sometimes I just don’t have that extra time to whip things up from scratch. Can you make this cake from scratch! Oh absolutely! For the sake of this post though, we are thinking time saving and budget friendly. What’s even better is you’re not sacrificing taste either.

Let’s get right to that buring question! Why in the the world would you want a waffle cake or a regular cake? What sets waffle cakes apart from regular cakes? The waffle layers do for this cake what waffles themselves do that, say, pancakes cannot. Waffles are often a bit more cripsy than pancakes.

Wherever they are, waffle cakes just add a gorgeous, yummy twist.

Ready to get on with your waffle cake journey? First things first, let’s talk waffle irons. There are so many waffle irons out there, it can easily be overwhelming. You don’t want to go too small or too shallow on this one. My advice when choosing a waffle iron for a waffle cake is to look for one with deep pockets! You’ll also want a non-stick surface for easy removal of the waffle layers. However, I always use cooking spray as an extra security. Or, as I tell my husband, it’s my trauma response to forgetting it on a definitely-sticks waffle iron once!

Achieving the perfect waffle batter consistency is key to even, flawless waffle cake layers. I try to make it easy on you with this recipe with the ingredients giving you a perfect batter to work with. However, it’s always good to know what you need to be looking out for.
So know that you want a batter that’s 1) thick enough to hold its shape, and 2) not too thick that it becomes doughy. Aim for a smooth and pourable consistency that spreads evenly on the waffle iron. Your batter should pour steadily and spread out easily with the back of your spoon.

Step-by-Step Instructions to Master the Recipe
Step 1. Heat up your waffle iron while you mix all your ingredients together to form your batter.
Step 2. Spray your waffle iron and pour in enough batter to make 1 waffle.
Step 3. Once your waffle is done, wrap in plastic wrap to cool completely. This will help your layer not only retain moisture but also absorb it from the heat as it cools! Repeat for 3 waffles. While the waffles cool, prepare your fruit!
Step 4. Once your layers have cooled COMPLETELY add your whipped cream and some of the fruit to your first layer.
Step 5. Continue with the other layers
Step 6. Add your toppings!
Step 6. Cool for 30 minutes before slicing! Enjoy!
Pairing Recommendations
Now that you’ve whipped up your waffle cake, it’s time to think about pairing options. This particular cake I feel pairs well with some classics. The classics being:
-A cup of tea
-A cup of coffee
-A glass of milk
-An added scoop of ice cream
Or mix it up and pair it with a fruit cocktail! As this waffle cake is a bit rich, I don’t recommend anything overly sweet. I feel sweet or creamy drinks work well and complement the fruit and whipped cream, without going too far!
Different Waffle Cake Mix Flavor and Fruit Ideas
Have at it! I always encourage making a recipe your own! Get creative with your waffle cakes by experimenting with different cake mix flavors and fruit combinations. Or leave out the fruit. Here are some ideas to help you think outside the (cake) box:
1. Lemon – make a lemon waffle cake with lemon cake mix. Get creative and add some zest into the batter!
2. Red Velvet – make a red velvet waffle cake with red velvet cake mix. I recommend using a cream cheese frosting! There’s a reason a cream cheese frosting and red velvet are often paired together. That reason is that it’s delicious!
3. Carrot Cake – a carrot waffle cake with some shredded carrots and nuts in the mix. I would also recommend a cream cheese frosting with this one too!
4. Vanilla Cake – with a vanilla cake, you essentially have a blank canvas!
5. Tres Leche Cake – Use some condensed milk or sweetened condensed milk in the batter or as a frosting alternative on this one.
When it comes to fruit, the possibilities are also endless! Try topping your cake waffle with fresh berries, sliced bananas, or even grilled peaches for a fun twist.
